Chia and Quinoa Blueberry Breakfast Parfait

Combining chia, quinoa and berry superfoods makes this a rockstar breakfast. I like to make a big batch of quinoa on Sundays and enjoy it throughout the week. Quinoa is one of the fastest cooking whole grains.
INGREDIENTS
SERVES 4
- 2 cups unsweetened almond milk
- 1/2 cup chia seeds
- 1 tbsp honey
- 1 tbsp pure vanilla extract
- 1 cup dry quinoa
- 2 cups water
- 4 cups blueberries
DIRECTIONS

TO MAKE CHIA FILLING:

Combine chia seeds, almond milk, vanilla extract and honey in a bowl. Mix well until combined and the mixture begins to thicken.

Cover and store in the refrigerator for at least one hour but overnight is best. If too thick, add more almond milk to thin out.

TO MAKE QUINOA:

Soak quinoa overnight or give it a good rinse before cooking.

Add water to a saucepan and bring to a boil.

Let quinoa cool completely before building parfait.

TO MAKE PARFAIT:

In a dish, add a layer of quinoa, then chia pudding, then berries and repeat until ingredients are finished.
