Tuscan Ricotta Ravioli with Spinach and Mushrooms

Who doesn’t love ravioli? Don't be intimidated to make your own! Take some assistance from packaged wonton wrappers. Ravioli are the perfect vessel to get more vegetables in the diet and they fit nicely in the Mediterranean diet.

INGREDIENTS

SERVES 4

  • 1 tbsp Extra Virgin Olive Oil
  • 4 medium Button Mushrooms
  • 2 cups Fresh Spinach
  • 1 clove garlic
  • 1 cup ricotta cheese
  • 1/4 cup shredded parmesan cheese
  • 1/4 tsp Kosher Salt
  • 1/8 tsp Black Pepper
  • 36 Wonton Wrappers

DIRECTIONS

1 In a medium skillet over medium heat, add olive oil, mushrooms, and spinach.
2 Saute until spinach is wilted.
3 Add garlic and stir for 1 minute.
4 Transfer to a mixing bowl and add ricotta cheese, parmesan cheese, salt, and pepper — stir to combine.
5 Lay 18 wonton wrappers out on a countertop or cutting board.
6 Measure out 1 tablespoon of ricotta filling on each wonton square.
7 Fill a small bowl with water.
8 Brush water on the outside edges of the square and place another square on top.
9 Take a fork and crimp down on the sides, sealing the ravioli.
10 Repeat for each ravioli.
11 Fill a saucepan half-way with water and bring it to a boil.
12 Place 4 to 5 ravioli in the boiling water for 1-2 minutes or until they float.
