Baked Apple Oatmeal

Apples and oats burst with fiber, which can help regulate digestion, while the pecans provide healthy unsaturated fats. Bake a double (or triple) batch on the weekend to reheat for breakfast throughout the week, or whip them up as a crowd-pleasing addition for your next brunch.
INGREDIENTS

- 1/2 cup Rolled Oats
- 3/4 cup Unsweetened Vanilla Almond Milk
- 2 tsp Spices, cardamom
- 2 tsp Cinnamon, Ground
- 2 tsp Apple Butter
- 2 medium apple
- 2 tbsp Pecans, Chopped
- 2 tbsp Raisins, seeded
- 1 tsp Coconut Sugar
DIRECTIONS

Preheat the oven to 350 degrees Fahrenheit.

Slice the top off the apples and use a spoon to scoop out the inner flesh. Add the hollowed-out apples to a greased casserole dish.

Chop the flesh into chunks and set aside.

Heat the almond milk, spices, apple butter, chopped apple, coconut sugar, and oatmeal over medium heat, and simmer for 5-6 minutes (until the almond milk is absorbed)

Remove from heat and stir in the pecans and raisins/cranberries.

Spoon the oatmeal mixture into the apples. Garnish with an additional dusting of cinnamon then bake in the oven for 15 minutes.
