Chicken & Goat Cheese Salad

Crunchy vegetables, lean chicken breast and calcium-rich goat cheese make this salad a healthy choice for lunch.
INGREDIENTS
SERVES 1
- 8 oz raw boneless, skinless chicken breast
- 2 cups chopped romaine lettuce
- 1/4 carrot(s)
- 1/2 cucumber(s)
- 1/4 medium red onion
- 2 tbsp goat cheese
- 2 tsp raspberry vinegar
DIRECTIONS

Using cooking spray, cook chicken in a non-stick pan over medium heat. Cook until browned on the outside and cooked throughout, 8 to 10 minutes per side.

Slice chicken breast into 1 inch strips.
