Chicken with Mushrooms, Kale and Yuzu Salad

This flavorful salad doesn't hold back any punches. Seamus Mullen, chef and author, loves to include seaweed — like nori — to add Asian-inspired flavor to his salads. Not only is it low in calories, but nori is also a great source of iodine, a mineral your thyroid needs to function properly. Hearty mustard greens add earthy bitterness, while a citrusy yuzu vinaigrette keeps this salad feeling light and fresh.
INGREDIENTS
SERVES 1
- 1 cup Mustard greens, raw
- 1 cup raw kale
- 1 cup raw brown mushrooms
- 3 oz rotisserie chicken breast
- 1 sheet Nori
- 1 medium peeled cucumber
- 1 serving Soft Boiled Eggs
- 1 tbsp Seeds, sesame seeds, whole, dried
- 1 tbsp Yuzu Dressing & Marinade
DIRECTIONS

Cook soft-boiled egg.

Sautee mushrooms until soft.

Mix together all the ingredients.
