This chopped salad is loaded with vegetables and includes soy nuts and tofu for protein.
INGREDIENTS
SERVES 1
- 8 oz firm tofu
- 1 red bell pepper
- 2 carrot(s)
- 1/3 cucumber(s)
- 4 canned hearts of palm spears
- 2 celery stalk(s)
- 3 tbsp soy nuts
- 1 tsp rice vinegar
- 1/4 lemon
DIRECTIONS

Place tofu in salad bowl.

Add the vegetables and soy nuts to bowl.

Toss with vinegar and lemon juice.
