Cranberry Crumble Oatmeal

Cranberries offer some serious health benefits, including vitamin E and tons of antioxidants. This recipe is free of refined white sugar found in most cranberry sweets. It’s also high in fiber, is a great source of vitamin C and supplies iron, an immune system-supporting mineral to help you get through the cold and flu season.
INGREDIENTS
SERVES 1
- 7 tbsp Rolled Oats
- 1/2 cup Fresh Cranberries
- 1 red delicious Small Apple
- 2/3 cup Unsweetened Vanilla Almond Milk
- 1 tsp Coconut Oil
- 10 tsp Coconut Sugar
DIRECTIONS

Heat the coconut oil and 2 Tbsp of oats in a small nonstick pan over medium-high heat for 2 to 3 minutes, until the oats start to toast. Remove from hit, stir in 1 tsp coconut sugar and set aside.

Cook the remaining oatmeal, cranberries, apples and almond milk in a saucepan over medium heat until the liquid absorbs and the berries burst, 6 to 8 minutes.

Transfer the oats to your serving bowl and top with the crumble, then serve immediately.
