Grilled Vegan Portobello Sliders Stack

You’ll insert a skewer into grilled portobello mushrooms and red bell peppers along with whole-grain slider rolls spread with guacamole. Mushrooms naturally contain vitamin D, which can help promote bone health.
INGREDIENTS
SERVES 4
- 2 medium whole-wheat dinner roll
- 5 Portabella Mushroom Caps
- 1 Red Bell Pepper (large)
- 3/4 cup Guacamole
DIRECTIONS

Prepare a grill.

Slice rolls in half, burger-style. (Note: Ideally, use 1 1/2-ounce rolls, about 3-inch diameter.) Set aside.

Remove stems from mushrooms.

Cut bell pepper into 5 pieces.

Spritz mushrooms and red bell pepper pieces with cooking spray.

Grill over direct medium-high heat until well done, about 10 minutes total, flipping only as needed. Set grilled mushrooms and bell pepper pieces aside on a rack over a rimmed baking sheet to allow draining of any excess liquids.

Spread guacamole on the cut surface of each bread roll.

Insert onto a 10- to 12-inch bamboo skewers the following, roll slice (guacamole side up), mushroom, and bell pepper piece. Continue inserting until all ingredients used, ending with a roll slice (guacamole side down), and serve.
