Grilled Zucchini Baba Ghanoush

This homemade baba ghanoush recipe uses grilled zucchini instead of traditional eggplant for an easy-to-make, flavorful dip or spread.

INGREDIENTS

SERVES 8

  • 1 tbsp 100% Lemon Juice
  • 1 tbsp extra-virgin olive oil
  • 2 zucchini(s)
  • 3 tbsp Tahini
  • 2 garlic clove
  • 1 pinch sea salt
  • 1/4 tsp ground cumin
  • 1 pinch Spices - Smoked Paprika

DIRECTIONS

1 TIP: Cut the zucchini lengthwise into 4 slices each.
2 Prepare an indoor or outdoor grill. In a small bowl, whisk together the lemon juice and oil. Pour into a 9- x 13-inch dish. Add the zucchini slices and toss to fully coat with the lemon vinaigrette. Grill the zucchini over medium-high until well cooked and rich grill marks form, about 5 minutes per side.
3 Add the grilled zucchini, tahini, garlic, salt, cumin, and paprika to a food processor. Cover and pulse until desired consistency is reached.
4 Transfer to a medium bowl, cover, and chill until ready to serve.
