A burrito can set you back two meals' worth of calories! Not these bean burrito-style wraps, thanks to refreshing lettuce acting as tortillas and mango providing a sweet balance in lieu of dairy. Plus, you get four wraps in one satiating serving.

INGREDIENTS

SERVES 1

  • 1 cup 365 Organic Canned Black Beans
  • 3/4 cup Diced Mangos
  • 1/2 whole Avocado
  • 1/2 cup Pico de gallo
  • 4 leaf Bibb Lettuce

DIRECTIONS

1 Gently combine the beans, mango, avocado, and pico de gallo. (TIP: Consider making this with 1 cup of freshly prepared dry beans.)
2 Stuff the bean salad mixture into the lettuce leaves, about 2/3 cup each.
3 Roll up and enjoy.
