This breakfast recipe is perfect for anyone on a Mediterranean diet. Scrambled eggs and eggs whites deliver 27 grams of filling protein per serving.

INGREDIENTS

  • 1 egg(s)
  • 4 egg white(s)
  • 3 tbsp part-skim ricotta cheese
  • 3/4 cup baby spinach

DIRECTIONS

1 Lightly beat eggs. Using a cooking spray, add to a non-stick pan and scramble.
2 Top eggs with ricotta and spinach.
