Middle Eastern Eggs in a Mug

Instead of hummus, you’ll be dipping whole-grain pita chips into a different Middle Eastern-inspired delight: scrambled eggs whirled with extra-virgin olive oil, lemon juice, scallions and grape tomatoes.
INGREDIENTS
SERVES 1
- 1 tsp Extra Virgin Olive Oil
- 3/4 tsp LEMON Juice, Fresh Squeezed
- 2 Free Range Large Eggs
- 1/8 tsp Sea Salt
- 1 stalk scallion(s)
- 1/2 cup Grape Tomatoes
- 1 oz Whole Grain Pita Chips - Sea Salt
DIRECTIONS
