Middle Eastern-Spiced Creamy Tomato Soup

When you make a soup creamy by way of hummus instead of heavy cream, it can absolutely be fit in to any healthful plan.
INGREDIENTS
SERVES 4
- 28 oz Fire Roasted Diced Tomatoes
- 2 cups low-sodium vegetable broth
- 1 cup Classic Hummus
- 1 1/2 tsp Lemon Juice
- 1 1/2 tsp extra-virgin olive oil
- 2 garlic clove
- 3/4 tsp sea salt
- 1/2 tsp Ground Cumin
- 1/4 tsp Cinnamon, Ground
- 1/2 tsp Harissa, Spicy
- 1/3 cup Parsley
- 4 oz Whole Grain Pita Chips - Sea Salt
DIRECTIONS

Add the tomatoes, broth, hummus, lemon juice, olive oil, garlic, salt, cumin, cinnamon, and harissa (or hot pepper sauce, to taste) to a blender. Cover and puree.

Pour into a large saucepan and bring to a boil over high. Adjust seasoning.

Ladle into individual bowls, sprinkle with parsley leaves, and serve with one ounce of pita chips. (Hint: For a heartier bowl of soup, sprinkle with feta cheese at serving.)
