This creamy cereal dish combines walnuts, berries, soy yogurt and quinoa, making it a nutrient-packed breakfast.
INGREDIENTS
SERVES 1
- 1/3 cup cooked quinoa
- 3/4 cup plain soy yogurt
- 1/4 tsp pure vanilla extract
- 1/8 tsp ground cinnamon
- 1/3 cup blueberries
- 11 walnut halves
DIRECTIONS

Mix together quinoa, soy yogurt, vanilla, and cinnamon.

Spoon 1/2 of the quinoa mixture into a glass, then 1/2 of the blueberries and walnuts.
