Nutty Berry Quinoa Parfait

This creamy cereal dish combines walnuts, berries, soy yogurt and quinoa, making it a nutrient-packed breakfast.

INGREDIENTS

SERVES 1

  • 1/3 cup cooked quinoa
  • 3/4 cup plain soy yogurt
  • 1/4 tsp pure vanilla extract
  • 1/8 tsp ground cinnamon
  • 1/3 cup blueberries
  • 11 walnut halves

DIRECTIONS

1 Mix together quinoa, soy yogurt, vanilla, and cinnamon.
2 Spoon 1/2 of the quinoa mixture into a glass, then 1/2 of the blueberries and walnuts.
3 Repeat the layers, ending with the walnuts.
