Roasted Beets

Paleo-friendly holiday dish, sure to please.
INGREDIENTS
SERVES 6
- 2 lb Beets
- 1/4 cup red wine vinegar
- 3 tbsp olive oil
- 1 tsp fresh rosemary
- 1 pinch salt and pepper
DIRECTIONS

Preheat oven to 450 degrees.

Combine beets with vinegar, oil, rosemary, salt, and pepper on a rimmed baking sheet. Roast, tossing once, until the vegetables are tender, 30 to 35 minutes.
