Salmon Croquettes

Salmon is loaded with omega-3 fatty acids.
INGREDIENTS
SERVES 4
- 15 oz Cooked Atlantic Salmon
- 6 stalk Fresh GREEN ONIONS
- 1 tbsp Dill Weed, Fresh
- 1 tbsp Mayo
- 1 Egg
- 1/4 cup Whole Wheat Bread Crumbs
DIRECTIONS

Combine boneless, skinless salmon; green onions, fresh dill, mayonnaise, egg and whole-wheat breadcrumbs.

Form into 4 patties; cover tightly with plastic wrap and refrigerate up to 2 days.

To cook, heat a splash of oil in a large nonstick skillet over medium heat for 3 minutes.

Dredge patties in flour; add to hot oil and cook 4 to 5 minutes per side.
