The chickpeas used in hummus are a great source of protein and fiber, among other important nutrients. Lemon juice offers vitamin C and antioxidants – perfect for boosting immunity. This smoky hummus can be savored with your vegetables of choice.

INGREDIENTS

SERVES 5

  • 1 3/4 cups Chickpeas (garbanzo beans, bengal gram), mature seeds, canned, solids and liquids
  • 2 tbsp Lemon juice, canned or bottled
  • 1 garlic clove
  • 1/2 tsp Spices - Smoked Paprika
  • 2 tbsp Tahini
  • 2 tbsp Chipotle Peppers in Adobo Sauce
  • 4 sprigs Parsley, fresh

DIRECTIONS

1 Combine chickpeas, lemon juice, garlic, paprika, tahini, chipotle peppers, and parsley into a blender.
2 Blend until smooth.
3 Move into a serving bowl and serve as a dip with your vegetable of choice.
