Stewed Cajun Turkey, Red Beans and Oats

INGREDIENTS
SERVES 3
- 1 tbsp olive oil
- 8 oz 93% Lean Ground Turkey
- 1 large Green Bell Pepper
- 1 medium red onion
- 1 tbsp Cajun Seasoning
- 3/4 tsp sea salt
- 1 1/4 cups Low Sodium Chicken Broth
- 1 3/4 cups Diced Tomatoes, Green Chilies
- 1 cup Old Fashioned Rolled Oats
- 15 oz Dark Red Kidney Beans - No Salt Added (canned)
DIRECTIONS

Heat the oil in a large (PFOA-free) nonstick skillet over medium-high. Add the turkey, bell pepper, onion, Cajun seasoning, and 1/4 teaspoon of the salt and sauté until the turkey is crumbled and well-done, about 5 minutes. Set aside.

Bring the broth, diced tomatoes (including all the liquid), and remaining 1/2 teaspoon salt to a boil in a large saucepan. Reduce heat to medium, add the oats, beans, and turkey mixture, and stir until the oats are fully cooked, about 5 minutes.

Transfer to bowls and serve
