Stewed Cajun Turkey, Red Beans and Oats

This savory oatmeal is inspired by Cajun red beans and rice, but it’s more interesting and easier to make. Recipe and image courtesy of Jackie Newgent, RDN.

INGREDIENTS

SERVES 3

  • 1 tbsp olive oil
  • 8 oz 93% Lean Ground Turkey
  • 1 large Green Bell Pepper
  • 1 medium red onion
  • 1 tbsp Cajun Seasoning
  • 3/4 tsp sea salt
  • 1 1/4 cups Low Sodium Chicken Broth
  • 1 3/4 cups Diced Tomatoes, Green Chilies
  • 1 cup Old Fashioned Rolled Oats
  • 15 oz Dark Red Kidney Beans - No Salt Added (canned)

DIRECTIONS

1 Heat the oil in a large (PFOA-free) nonstick skillet over medium-high. Add the turkey, bell pepper, onion, Cajun seasoning, and 1/4 teaspoon of the salt and sauté until the turkey is crumbled and well-done, about 5 minutes. Set aside.
2 Bring the broth, diced tomatoes (including all the liquid), and remaining 1/2 teaspoon salt to a boil in a large saucepan. Reduce heat to medium, add the oats, beans, and turkey mixture, and stir until the oats are fully cooked, about 5 minutes.
3 Transfer to bowls and serve
