Sweet and Savory Grain-Free Granola

INGREDIENTS

SERVES 10

  • 1 cup Organic Raw Walnuts
  • 1 cup Raw Cashews
  • 1 cup Pecan Halves, Raw
  • 1杯南瓜生种子
  • 1/4 cup Coconut Oil, Organic, Unrefined
  • 1/4 cup Pure Maple Syrup
  • 2 medium Banana!
  • 1 tbsp pure vanilla extract
  • 2 tsp Ground Cinnamon
  • 1 dash Salt
  • 1 tbsp Thyme, Fresh
  • 1/2 cup Raisins

DIRECTIONS

1 ** To prepare: soak and dry the walnuts, cashews and pecans. Melt the oil over medium and soak the raisins overnight and then rinse and pat dry.
2 Preheat oven to 250F.
3 Coarsely chop walnuts, cashews and pecans and add to a bowl. Add pumpkin seeds.
4 Add coconut oil, maple syrup, bananas, vanilla extract and cinnamon to a blender and puree until smooth. Season with salt, to taste.
5 Pour liquid mixture over nut mixture and toss to thoroughly coat. Mix in thyme.
6 Spread mixture in a single layer on a parchment-lined baking sheet. Bake in oven until granola is set and slightly browned, approximately one hour, adding in raisins in the last few minutes of baking. The granola will feel soft, not crunchy. Remove from oven and chill in refrigerator until granola has a crunchy consistency. Remove and break up into chunks.
