Superfoods are nutrient-rich foods considered to be especially beneficial for health, well-being and the prevention of disease. Recipe courtesy of Andrea Kapner, a certified Health Educator who teaches nutrition and cooking classes to children and adults in New York City.
INGREDIENTS
SERVES 15
- 1 cup Pumpkin seeds
- 1 cup Shredded Unsweetened Coconut
- 1/2 cup Hemp Hearts
- 1/2 cup Hemp Protein
- 4 tbsp chia seeds
- 20 Dates, Medjool
- 6 tbsp Coconut Oil
- 4 tbsp Cacao Powder
- 1 tsp Pure Vanilla Extract
- 1/2 tsp 100% Organic Vanilla Beans Ground
- 6 tbsp Oatmeal-Rolled Oats
- 2 tbsp Poppy Seed
DIRECTIONS

Pulse the dry ingredients (except oats and poppy seeds) quickly in a food processor or high-speed blender. Don't overmix it - should still be chunky. Place the mixture in a bowl.

Blend all wet ingredients in a food processor until smooth. You may have to add a dash of water and stir the mixture a few times by hand.

Pour the wet ingredients over the dry ingredients, add oats and poppy seeds and stir until well combined.

Spread the mixture evenly into an 11x7-inch baking dish and pack it down. Place in the fridge for about 30 minutes.

Cut into bars, wrap in paper and store in an airtight container. Will keep in refrigerator for one week.
