Turkey and Green Apple Grilled Cheese Sandwiches

This savory sandwich features apple slices, cheese, turkey and fresh thyme tucked into grilled tortillas. Not a big tortilla fan? Use your bread of choice instead. Green apples burst with immunity-boosting polyphenols and fiber, which can aid with digestion.

INGREDIENTS

SERVES 2

  • 2 Corn Tortillas
  • 1/2 medium Granny Smith Apple
  • 1/2 lb roasted turkey breast
  • 1 tsp Thyme, fresh
  • 2 tsp Mayonnaise, reduced fat, with olive oil
  • 2 oz Mozzarella, Finely Shredded

DIRECTIONS

1 Spread a thin layer of mayonnaise or butter onto one side of the tortillas.
2 Sprinkle lightly with fresh time.
3 Place the apple slices on one half of each tortilla.
4 Top the apple slices with slices of cheese.
5 Top the cheese with the turkey.
6 Fold the tortillas closed and grill in a panini grill, waffle iron, or fry pan with a lid for 6-8 minutes.
